Back Office Basics

Recent changes in regulations require districts to perform multiple imports of Direct Certification files into the Horizon software. From providing useful information and personal stories about how to increase participation and reduce costs, to dealing with the ever-changing rules and regulations of K-12 food service management, the speakers at past Horizon Users Group Conferences have educated, enlightened, and entertained with their presentations.

Horizon is proud to welcome Tony Geraci, Cafeteria Man; Mo Shamali, Kentwood Public Schools Child Nutrition Director; and Dennis Barrett, Director of Food Services Division, LAUSD, as our featured speakers for the 2012 conference.

Tony Geraci
Executive Director of Nutrition Services, Memphis City Schools

Anthony Geraci currently serves as the Executive Director of Nutrition Services at Memphis City Schools. Formerly the Director of Food and Nutrition for Baltimore City Public Schools, he recently relocated to Memphis this fall to fulfill his dream of utilizing a state-of-the-art central kitchen and processing center to put healthier meals in front of Memphis’ children. When in Baltimore, he founded Great Kids Farm, a 33-acre farm at which Baltimore City Public School students grow organic produce to sell to restaurants and at farmer's markets. Prior to Baltimore, he lived in New Hampshire, where he was the developer and Executive Director of First Course—a culinary training and job placement program for people who are developmentally disabled or recovering from substance abuse or mental illness.

Tony GeraciTony is also a chef, a food service consultant, and the former Food Service Director for the Con-Val School District in southwestern NH. He has been an enthusiastic supporter, practitioner, and architect of the National Farm-to-School movement.

Tony is a native of New Orleans and a third generation restaurateur who completed a traditional apprenticeship with four-star hotels and restaurants throughout the U.S. More recently, he has worked with food service directors throughout the country, streamlining their operations for purchasing, introducing local products to their menus, and incorporating vocational training.

He is part of first lady Michelle Obama's initiative to fight childhood obesity and has been featured in two documentaries about the national school lunch program, The Cafeteria Man and Angry Moms. His New Hampshire program was cited as a "Best Practices" example of one of the most innovative approaches to school nutrition in the nation. He was also honored by FoodService Director Magazine in 2009. A year later, Gov. Martin O'Malley gave him Maryland's first Smart, Green and Growing—Buy Local Agricultural Challenge Award for getting local produce on student plates.

Since his arrival in Memphis, Tony has expanded Breakfast in the Classroom to 50 more schools and added a supper program for about 5,000, serving them in schools where students are getting help with homework and other activities. He is already making strides to going green. Over 60 dishwashers in Memphis City Schools are now running again that weren't running two weeks ago... meaning dumpsters are no longer flowing with Styrofoam trays, and lowering costs as well as the carbon footprint. He is also looking at doing contract cropping with local farmers to grow sweet potatoes, collards, and "all the other traditional Southern superfoods we happen to grow right here" for the school lunch program.

But for Tony, most important is feeding the kids. “It’s about feeding kids good healthy food, so they can learn the lessons that we’re trying to teach them, so they can be productive citizens and keep the country spinning.”

As the newly hired Food and Nutrition Director of the city's public school district, Geraci hatches an ambitious, multi-faceted plan to feed students healthy, locally-sourced meals, teach them nutritional awareness, and offer them training and vocational opportunities in the world of food. Mo Shamali
Child Nutrition Director, Kentwood Public Schools, Grand Rapids, MI

Mo ShamaliMo Shamali has been the Child Nutrition Director for Kentwood Public Schools in Grand Rapids, Michigan for more than 20 years.

Kentwood has 17 sites and serves over 9,000 students each day. Continually marketing the department's menu selections to the growing multi-cultural population within the district is one of the most daunting challenges Mr. Shamali faces on a regular basis. As the winner, along with his Kentwood colleagues, of the 2009 UGC Innovation Award, Mr. Shamali will share with our attendees some of his successful marketing ideas as well as other innovative approaches to the daily business of serving students and increasing participation.

 

Dennis Barrett
Director of Food Services Division, Los Angeles Unified School District

With 40 years of management experience in the food service industry, Dennis Barrett is Director of Food Services Division for the Los Angeles Unified School District (LAUSD), the nation’s second largest school distrct. The Branch has a $350 million annual operating budget, serves 117 million meals a year, and has 5,000 employees working at 650 locations.

Dennis BarrettDuring his tenure at LAUSD, Mr. Barrett has focused on productivity and quality improvement. Through his leadership, menus have been refined so that nutritious foods, meeting USDA regulations, are more appealing to students. District enrollment has declined by 3% over the past two years, but the number of meals has increased by 4%, resulting in a 5% increase in revenues. The food cost per meal has declined by $.05/meal at a time when food costs are rising across the nation.

Mr. Barrett previously served as Food Service Director for the Mesa County Valley School District in Grand Junction, Colorado from 2005-2006, where he restored that district’s meal program after years of it being operated by a private management firm. He was previously Division Manager of Food and Child Nutrition Services for the Dallas, Texas Independent School District from 1995-2004, where he improved efficiencies and reduced food cost by 10%.

Prior to Dallas, Dennis was Food Services Director for the Anchorage School District from 1982-1995 and for the Clark County Public Schools in Las Vegas, Nevada from 1980-1982.

Mr. Barrett was IFMA’s 2003 Silver Plate recipient as Operator of the Year in the K-12 Category, and was also the winner of the 2011 Golden Carrot Award presented by the Physicians Committee for Responsible Medicine. PCRM established the Golden Carrot Awards in 2004 to recognize food service professionals doing an exceptional job of improving the healthfulness of school lunches.

Cost-Saving Tips:
With a little advance planning and some online research, you can find ways to save even more money and improve your chances of justifying your attendance.

  • Be an early bird. Register on or before 01/27/12 and take advantage of the lower conference rate.
  • Save on lodging. Share a room with a coworker to save on expenses.
  • Don't go hungry or spend a fortune on meals. All full-conference registration packages include breakfasts, breaks, lunches (except second day), and dinners.
  • Save on rental cars. Two different times on both arrival and departure days, shuttles will be provided between the airport and the conference center.

Airport Shuttle Pickup

If you are flying and need to utilize a shuttle from the airport to the conference center, three shuttle times will be allocated. Horizon will provide three shuttle pickups at the airport on Monday,
March 19.

The first shuttle pick-up time will be 12:00 noon.
The second shuttle pick-up time will be 5:30pm.
The third shuttle pick-up time will be 7:30pm.

If you are flying and planning to utilize one of these shuttles, please send Julie Denmon your flight information as well as your cell phone number as soon as possible so that she may coordinate capacity needed for each shuttle.

It will be of great help to the drivers if we can provide them with your cell phone numbers. They will already have your flight information, but cell phones help a great deal in the event they need to contact you.

In the event you miss the first shuttle, please notify Strictly Business Limo Services that you will catch the next available shuttle. Please note that there are only two scheduled shuttle times.

 

Airport Shuttle Departure

Horizon will also provide a shuttle run from the hotel back to the airport on Thursday, March 22.

The shuttle departure time will be 1:00pm.

Atlanta Airport Information

We will make every effort to make your shuttle transition as smooth as possible. For those who have never ventured through the Atlanta airport, below are a few helpful facts you should know:

Who takes care of travel arrangements?

Horizon will reserve your hotel room upon receipt of your registration, but each attendee is responsible for securing his/her own travel plans. You will receive detailed information to help with coordinating your travel at the same time that you receive your conference registration confirmation. The most current information concerning travel will also be posted online. What do I need to consider when scheduling my flights?

Once you've determined which shuttle time you would like to use (Monday, March 19, 12:00 noon or 5:00pm), please plan your flights accordingly. Remember to allow time for airport security checks, baggage claim, walking the concourse, etc. And when planning your flight home, please allow at least an hour of travel time from the hotel to the airport.

 

Will transportation be provided to and from the airport?

Yes. Scheduled transportation via shuttle bus will be provided. Times for the shuttle runs will be sent with your registration confirmation as well as being posted online.

Two scheduled trips from Hartsfield-Jackson airport to Lake Lanier Islands Resort will be available at 12:00noon and 5:30pm on Monday, March 19. A scheduled trip back to the airport will be available at 1:00pm on Thursday, March 22, 2012.

 

What happens if I miss the airport shuttle?

Horizon shuttles will run only at the designated times. In the unfortunate event you should happen to miss the provided shuttle, you will be responsible for your own transportation. Taxis are available at the airport and hotel for a designated cost.

 

Where do I go when I arrive at resort?

Check in at the resort registration desk upon your arrival on Monday. On Tuesday morning prior to the beginning of the conference, you will be provided a welcome package at Horizon's registration area at the conference center. It will contain all of your instructions about the conference. This will be your starting point for finding your way around the conference.

 

Do I need to bring anything with me to the event in the way of forms or IDs? Any items needed for the sessions?

Aside from personal items, you will only need a valid ID to present when registering at the hotel. Materials needed for the conference will be provided to you. Several classes being offered have been approved by SNA for continuing education. To receive credit, SNA members will need to provide their SNA ID number when attending an approved class.

 

Will meals be provided?

For participants who are staying at the resort for the full conference, all meals from Monday evening dinner through Thursday lunch are provided.

For participants attending the full conference but not staying at the resort, all meals from Tuesday morning breakfast through Thursday lunch are provided.

For participants attending the first-day event, all meals on Tuesday will be provided.
